From Agave to Bottle.
Every step of the process is designed to highlight the natural character of the agave.
Made from 100% Blue Weber agave grown in the highlands of Jalisco, Dos Caras is additive-free and crafted using a distinctive production process that begins with shredding the agave before cooking. The agave is then slow-cooked in vertical autoclaves, distilled, and bottled at the source in Arandas, Jalisco.

Our Process
-
Our agave is grown in Arandas, the highlands of Jalisco. This area is known for its red, mineral-rich soil and temperate climate. Highland agave is larger than those that grow in the lowlands and has a higher sugar content. The tequila from the highlands is widely recognized for its citrus-forward flavors.
-
Most Master Distillers cut and cook raw agave in quarters. Our Master Distiller takes a different approach: shredding the raw agave then placing them in the vertical autoclave. This allows for more precise cooking and enhances flavor development.
-
Next, our juice is fermented in open-air stainless steel vats
for up to 72 hours. Following fermentation, the juice is distilled twice—first in stainless steel stills with copper coils and second in pure copper stills. Copper plays a vital role in distillation, the sulfurs bind to the copper, freeing the flavors of the agave. -
Once distillation is complete, the Blanco is ready to be bottled. Our Reposado is rested for 6-9 months in American Oak barrels. Our Añejo is aged for 2 years in American Oak barrels. Our “Old Soul” Extra Añejo is aged 5 years in American Oak barrels.
Kosher Certified. Additive-Free.
Every bottle of Dos Caras is produced under rigorous standards for traceability and quality.
Our kosher certification is renewed annually through on-site audits that verify our production process and confirm that no additives of animal or chemical origin are used.
We also utilize renewable energy initiatives, including solar power and biomass systems, as part of our commitment to responsible production.
The result is tequila made with transparency, consistency, and respect for the agave.
